Coconut Flour Chocolate Chip Banana Bread: Drool Emoji Here
Never have I ever finished a loaf of chocolate chip banana bread to myself. I have… in a matter of a few days… but still. This moist and delicious banana bread was just what I needed to finish off 2019 and if it’s possible, I miss it more and more each day.
Here’s what you need:
2 1/2 bananas
3 eggs
1/4 cup almond butter
2 1/2 cups of coconut flour
1/2 - 1 cup of unsweetened vanilla almond milk
1/2 teaspoon of vanilla extract
1 teaspoon of cinnamon
3 teaspoons baking soda
1/2 teaspoon sea salt
1 cup dark chocolate chunks
Here’s what you’ll need to do:
Preheat oven to 350F
In a bowl, mash two bananas
Add the eggs, almond butter and mix together, add vanilla extract
Add the coconut flour, baking soda, and sea salt to the wet ingredients and mix until it’s combined, add cinnamon, add 1/2 cup of almond milk, add more if batter is dry
Mix in a majority of the chocolate chips
Line a bread pan with parchment paper and pour the batter on top of the parchment paper in the bread pan
Slice another half of a banana and lay the slices on top and sprinkle on some chocolate chips
Bake for 40 minutes and allow to cool before slicing
Enjoy and prepare to devour the bread all by yourself :)
