Coconut Flour Chocolate Chip Cookies
Full disclosure: I’ve never made my own cookie batter before, so the fact that I can make this and enjoyed it is a small victory for me. Using Salt in my Coffee’s recipe as inspiration, here’s my take on coconut flour chocolate chip cookies.
Here’s what you’ll need:
7 teaspoons of coconut oil
5 teaspoons of raw honey and one teaspoon of high fiber maple syrup (6T of raw honey is fine too!)
1/2 cup coconut flour
1/2 tsp baking soda
3 eggs
1 tsp vanilla extract
3/4 cup dark chocolate chips
sprinkle of cinnamon
a sprinkle of sea salt (optional)
Instructions:
Preheat oven to 350 degrees
Beat coconut oil and honey until smooth (I’ll be honest mine turned out a bit too liquidy but it still worked)
Stir in coconut flour and baking soda.
Add eggs and vanilla extract, and mix well.
Stir in chocolate chips
Stir in cinnamon and sea salt
Drop by tablespoon onto parchment-lined baking sheet.
Bake for 10-12 minutes, until just beginning to turn golden.
Let cool and enjoy with a glass of milk or almond milk!
