Coconut Flour Chocolate Chip Cookies

Full disclosure: I’ve never made my own cookie batter before, so the fact that I can make this and enjoyed it is a small victory for me. Using Salt in my Coffee’s recipe as inspiration, here’s my take on coconut flour chocolate chip cookies.

Here’s what you’ll need:

  • 7 teaspoons of coconut oil

  • 5 teaspoons of raw honey and one teaspoon of high fiber maple syrup (6T of raw honey is fine too!)

  • 1/2 cup coconut flour

  • 1/2 tsp baking soda

  • 3 eggs

  • 1 tsp vanilla extract

  • 3/4 cup dark chocolate chips

  • sprinkle of cinnamon

  • a sprinkle of sea salt (optional)

Instructions:

  • Preheat oven to 350 degrees

  • Beat coconut oil and honey until smooth (I’ll be honest mine turned out a bit too liquidy but it still worked)

  • Stir in coconut flour and baking soda.

  • Add eggs and vanilla extract, and mix well.

  • Stir in chocolate chips

  • Stir in cinnamon and sea salt

  • Drop by tablespoon onto parchment-lined baking sheet.

  • Bake for 10-12 minutes, until just beginning to turn golden.

Let cool and enjoy with a glass of milk or almond milk!
